In this module, you look at entrepreneurship on a tactical level. Technology enables a company to have various data at its disposal. With this data, a manager can make decisions and seize opportunities in the market. In the first quartile, you learn how to analyse this data. In addition, you gain knowledge about revenue management and risk management. In the second quartile, you and a fellow student design an F&B concept in which you incorporate the latest trends and developments, customer wishes and theory about concept development. You pitch this concept to a jury, using your acquired sales skills.

Learning goals

You learn to analyze various data in different ways and substantiate it by translating it into decisions and / or actions related to the objectoves of a hotel organisation.  This will be in the field of Revenue Management, Risk Management and feedback from guests. You then use these skills in a new quartile to develop your own F&B concept, based on analysis of theory, market developments and customer requirements. You develop this F&B concept into a concrete professional product with attention to a product plan, marketing plan and financial plan. Finally, you will learn to present and defend this concept effectively, substantiated and convincingly to the client, using the sales skills you have acquired in this quartile.
